Le maror (hébreu : מרור « herbes amères ») est l'un des principaux ingrédients du plat du seder ainsi que l'un des trois grands symboles du seder, rappelant l'amertume de la vie lors de l'esclavage en Égypte.
Le maror dans les sources juives
Le maror apparaît dans la Torah sitôt la prescription faite d'immoler une bête du menu bétail en offrande à YHWH car la chair de cette offrande devra être mangée avec des herbes amères (merorim)[1] ; aucune explication n'est apportée sur le type d'herbes désigné par le nom de merorim ni sur la raison de ce commandement.
La Mishna indique cinq types d'herbes pouvant être considérées comme amères : hazeret, oulshin, tamkha, 'har'havina et maror proprement dit[2].
