Le Teff, ou Tef, est une plante de la famille des Poacées (graminées), cultivée comme céréale secondaire en Afrique.

Nom scientifique : Eragrostis tef (Zuccagni) Trotter, famille des Poacées, sous-famille des Chloridoideae tribu des Eragrostideae.

Nom commun : teff.

Champ de teff dans les hauts plateaux d'Érythrée

Cette plante, originaire des hauts-plateaux d'Érythrée et Éthiopie, a des graines de très petite taille ; on dit qu'une poignée suffit pour ensemencer un champ entier. Cette particularité en fait une céréale très adaptée au mode de vie semi-nomade.

Le teff est une céréale particulièrement importante en Érythrée et Éthiopie, où il est l'ingrédient de base de ce pain non levé (injera traduction crêpe). La bière t'ella contient de l'injera.

Ces graines dépourvues de gluten sont précieuses pour les personnes tenues de suivre un régime sans gluten.
