Le kamaboko (蒲鉾) est une variété de produit alimentaire à base de poisson blanc du type du surimi (qui lui sert de produit de base).

Le kamaboko est généralement vendu sous forme de demi-cylindre. Certains sont fabriqués de telle façon que les tranches ressemblent à quelque chose. Le motif le plus courant est la spirale (il est alors appelé naruto).

On fabrique le kamaboko depuis le XIVe siècle au Japon mais on en trouve maintenant dans le monde entier.

On en trouve fréquemment dans les konbini sous forme de chiikama (assemblage de kamaboko et de fromage vendu sous vide).
